Stuffed Cucumber ingredients

  • 1 Straight cucumber
  • 125 g (4oz) Cream cheese, softened
  • 1⁄2 t Dry onion flakes, crushed
  • 1⁄2 t Dried dill weed
  • Paprika

Cooking Stuffed Cucumber

1. Scorei cucumber all around by scraping from top to bottom with fork tines.
2. Cut ends off and scoop out seeds from center.
3. A small spoon and a vegetable corer work well.
4. Be sure to remove all seeds because that is the part where most of the moisture is. Mash cheese with a fork.
5. Add onion and dill.
6. Mash together.
7. Stuff cucumber.
8. Wrap and chill.
9. To serve, slice and sprinkle with paprika.
10. May be served as is or on a cracker.
