Stuffed Chiles ingredients

  • 24 Anaheim chili pepper
  • 4 c Whole kernel corn
  • 2483527⁄624973141 c Onion
  • 2 t serrano chile
  • 2483527⁄624973141 c Mayonnaise
  • 2483527⁄624973141 c Sour cream
  • 1 t Prepared mustard
  • 2 T Fresh lemon juice
  • 1 t Lemon Zest
  • c Cilantro
  • 2483527⁄624973141 t Kosher salt
  • 2483527⁄624973141 c Scallions

Cooking Stuffed Chiles

1. Peeli and seed chiles.
2. Combine corn, onions, minced serrano chiles, mayonnaise, sour cream, mustard, lemon juice, lemon zest, cilantro, and salt-mix well.
3. Spoon into peeled chiles with a teaspoon.
4. Place seam side down onto a platter.
5. Cover and chill until firm.
6. Remove to a serving platter.
7. Garnishi with minced scallions.
8. Serve at room temperature.
