Stuffed Artichokes with Crab ingredients

  • 4 artichokes
  • 1⁄2 lb lump or Dungeness Crabmeat
  • 2 T olive oil
  • 1⁄4 Onion, chopped
  • 4 clv caramelized garlic
  • 2 Green onions; chopped
  • 1 Red bell pepper, chopped
  • 1 Rib celery, chopped
  • 1 t thyme
  • 1 t Tabasco
  • Pinch nutmeg
  • Freshly ground black pepper
  • 1⁄4 c Fresh bread crumbs
  • 2 Egg whites
  • Juice from 1 lemon
  • 1 c water

Cooking Stuffed Artichokes with Crab

1. Preheat the grill or oven.
2. Preheat a sauté pan. Add the olive oil, onion,caramelized garlic, bell pepper, and celery.
3. Sauté 2 to 3 minutes on medium, then cool.
4. Mixi in thyme,tabasco,nutmeg,fresh ground black pepper,breads crumbs, and egg whites.
5. Combine all the ingredients and add the crabmeat.
6. Set aside.
7. Lay the artichokes on their sides.
8. Cut off the top 1/2 inch, reach inside and pull out the chokes (the hairy looking pieces) and discard.
9. Fill the artichokes with the crab stuffing and put into an ovenproof pan with with one cup water and the juice from one lemon.
10. Bakei for 25 to 30 minutes covered;remove the cover an additional 5 minutes to brown.
