Strawberry mousse on meringue "Vacherin" ingredients

  • 1⁄2 Meringuage
  • 200 g raspberries, frozen
  • 75 g Sugar
  • 1⁄2 dl Raspberry Syrup
  • 4 Gelatine (leaves)
  • 4 dl Cream 35% (whipping, etc.)
  • 50 g Cocoa powder
  • sauce aux abricots 5d

Cooking Strawberry mousse on meringue "Vacherin"

1. PIPE THE MERINGUE ON A BAKING TRAY (LINED OUT WITH SILICON PAPER) INTO FLOWERS SHAPE (20 PIECES) WITH A PLAIN NOZZLE NR12.
2. BAKE AT 140°C.
3. FOR 2HRS WITH OPEN STEAM VALVE.
4. MELT THE GELATINE WITH THE RASPBERRY SYRUP.
5. POUR INTO THE BLENDED RASPBERRIES,FOLD THE SUGAR.
6. ADD THE WHIPPED CREAM.
7. WHEN SET PIPE THE MOUSSE WITH A STAR NOZZLE NR 12 ONTO THE BASE OF MERINGUE.
8. DUST THE TOP BASE WITH COCOA POWDER AND PLACE IT ON THE MOUSSE.
9. SERVE ON PLATES WITH THE SAUCE.
