Stovies (scottish skillet potatoes)

Stovies (scottish skillet potatoes) ingredients
- 2 T Bacon fat, butter, margarine
- 6 med Potatoes, sliced ΒΌ" -
- With skins on
- 2 med Onions, sliced
- 1⁄2 t Pepper
- 1⁄4 c Snipped parsley
- 3⁄4 c water
- 1⁄4 t Salt
Cooking Stovies (scottish skillet potatoes)
1. In a large skillet, melt fat and coat bottom and sides of skillet.
2. Layer half the potatoes and onions, then sprinkle with half the salt, pepper and parsley.
3. Repeat with remaining potatoes and spices.
4. Add water.
5. Bring almost to a boil.
6. Cover and reduce heat to low. Simmeri for about 30 minutes or until potatoes are tender and water is mostly absorbed.
7. If water is absorbed before potatoes are tender add a little more water.
