Stir Fried Eggplant with Tofu ingredients

  • 4 Chinese eggplants
  • 1 -Small Onion
  • 1 garlic
  • 1 pk Firm tofu
  • 2 T hoisin sauce
  • 2 T Black bean paste
  • 7 small dried red chilies

Cooking Stir Fried Eggplant with Tofu

1. Cut eggplant crosswise, at a diagonal, into 1 ½ inch pieces.
2. Cut tofu in 1 inch cubes.
3. In a nonstick skillet, panfry on all sides until golden, adding soy sauce and a pinch of sugar for added color.
4. Tofui should be crisp on the outside.
5. If you prefer, you may deep fry the tofu pieces (faster and easier).
6. Set aside.
7. Stiri fry or deep fry eggplant until tender.
8. Set aside.
9. Heat about 1 tablespoon oil in skillet and add chilies.
10. Stir the chilies around in the oil until the skin becomes black.
11. Add minced garlic and chopped onion, along with the hoisin sauce and black bean paste, sauteing until onion becomes tender.
12. Add the eggplant and the tofu.
13. Adjust seasonings.
