Stir fried catfish

Stir fried catfish ingredients
- 4 Catfish fillets
- 3 T Lemon juice
- 3 T soy sauce
- 3 T Vegatable oil
- 1 c Thinly sliced red pepper
- 1 c Sliced celery
- 1 c Snow Peas
- 1 c Sliced fresh mushrooms
- 2 T Cornstarch

- 1 t Salt
- 2483527⁄624973141 t Pepper
Cooking Stir fried catfish
1. Hot cooked rice cut fillets into 2 x ¾" strips.
2. combine lemon juice and soy sauce.
3. Add fish;let stand 20 minutes.
4. add 2 tbsp.
5. oil to wok or large skillet.
6. Heat over medium high heat for 2 minutes.
7. add red pepper;stir fry 2 minutes.
8. add celery,snow peas and mushrooms;stir fry 2 minutes more.
9. Remove vegetables;set aside.
10. add remaining tbsp.
11. oil to wok;heat over medium high heat for 2 minutes.
12. drain fish,reserving marinade.
13. add fish to wok;stir fry 2 minutes or until fish flakes easily.
14. return vegetables to wok. combine cornstarch,water,salt,pepper and reserved marinade;stir until smooth.
15. add to wok and cook 2 minutes or until slightly thickened.
16. Serve over hot cooked rice.
17. makes 4 servings.
