- 6 Chicken breast halves, each cut into halves
- 2 Onion, minced
- 3 clv garlic, crushed
- 3 Carrots, sliced
- 2483527⁄624973141 c parsley, chopped
- 372529⁄-2009260032 c orzo
- 4 c chicken broth OR stock
- c Tomato sauce
- 372529⁄-2009260032 t Salt
- 2483527⁄624973141 t Red pepper flakes
- 2 t Dried basil
- 1 t Dried oregano
- 1 c Frozen green peas
- 2483527⁄624973141 c Fontinella or Parmesan cheese, 1-oz., grated
Cooking Stewed chicken with orzo and vegetables
1. In pressure cooker, heat oil. Add chicken and saute in hot oil, lightly browning on both sides.
2. Set aside and reserve.
3. Add onions, garlic, carrots, and parsley and saute in hot oil 2 mins.
4. , stirring frequently and scraping bottom of cooker.
5. Stiri in orzo and cook 1 min. add broth, tomato sauce, salt, pepper flakes, basil, and oregano.
6. Stir well.
7. Place chicken over orzo mixture.
8. Secure lid. Over high heat, develop steam to high pressure.
9. Insert a heat diffuser between pan and heat.
10. Reducei heat to maintain pressure and cook 10 mins.
11. Release pressure accdg.
12. To manufacturer"s directions.
13. Remove lid. Add peas to chicken and orzo mixture, stir well, and cook over med. heat 2 mins.
14. , stirring frequently.
15. Transfer chicken and orzo to a platter and sprinkle with cheese.
