- 225 g Nuts, cashew
- 50 g Onions
- 1 Chile, fresh
- 372529⁄-2009260032 t curry powder
- 2483527⁄624973141 t Turmeric
- 250 ml coconut milk
- 2483527⁄624973141 t Chili powder
- 1 t Salt
- 2483527⁄624973141 t fenugreek
- Curry leaf sprigs
- 25 ml Oil
Cooking Sri lanka kadju (curried cashew nuts) 2
1. Chopi the onion and chile.
2. Remove the cashew nuts from the water, drain and place in a saucepan together with the chile, 1 tsp of curry powder, the turmeric, coconut milk, chile powder, salt, fenugreek and curry leaves.
3. Bring to the boil and simmer for 5 minutes.
4. Heat the oil in a frying pan and toss in the onion for a couple of minutes.
5. Add the cashew nut mixture and cook for a further 3 ~4 minutes then sprinkle with remaining curry powder.
