Squash Foo Young ingredients

  • 6 Egg whites
  • 1 Egg yolks
  • 1 1⁄2 c Frieda's Spaghetti Squash
  • 1⁄2 c Broccoli
  • 1⁄3 c Carrots
  • 1⁄2 c Red bell pepper
  • 1 T Frieda's chopped fresh basil
  • 1 T Frieda's chopped fresh dill
  • 1⁄4 t Pepper
  • 3 oz dried tomatoes
  • 2 c Tomatoes
  • 1⁄2 c low-fat reduced sodium chick
  • 1 Green onions
  • 1 garlic cloves
  • 1⁄4 t Pepper

Cooking Squash Foo Young

1. Rehydrate Frieda's dried tomatoes according to package directions.
2. In a medium bowl, beat egg whites and yolk until frothy.
3. Add the cooked Spaghettii Squash, broccoli, carrot, red pepper, herbs, and pepper.
4. Set aside.
5. For sauce, in blender or food processor place all sauce ingredients (last 6 listed).
6. Cover and process until pureed.
7. Spoon into saucepan; warm over low heat until heated through.
8. To cook pancakes, spray a nonstick skillet with aerosol cooking spray.
9. Drop batter, ¼ cup at a time, into skillet.
10. Cook over medium heat until browned; turn and cook until set. Place on heated platter and keep warm until all are cooked.
11. Serve topped with the sauce.
12. You may use 1 teaspoon dried herbs instead of fresh herbs.
