Spit-roasted rolled rib ingredients

  • 2 t Salt
  • 1 t Salt
  • 3⁄4 t garlic Powder
  • 1⁄2 t Coarse black pepper
  • 1⁄4 t Ginger
  • 1⁄4 t mustard

Cooking Spit-roasted rolled rib

1. One 4-5 pound rolled rib roast note: for variety, add either 1 tsp crushed rosemary leaves or ½ tsp crushed thyme leaves.
2. Trim off most of the outside fat from the roast.
3. Combine seasonings and rub into all surfaces of the roast.
4. Place on spit, 5-6" from coals.
5. Cook about 1 ½ hours or until desired degree of doneness is reached.
6. Yield: 6-8 serving.
