Spinach Lasagna

Spinach Lasagna ingredients
- 3 T Vegatable oil
- 1⁄2 lb lasagna noodles
- 2 garlic cloves, minced
- 1 med Onion, chopped
- 2 Tomatoes, chopped
- 10 med Mushrooms, sliced
- 1⁄2 t Oregano
- 1⁄2 t basil
- 1⁄2 t Rosemary
- 2 T Chopped fresh parsley
- 1 lb Washed spinach
- 1 c Cottage cheese
- 1⁄2 c Grated Parmesan
- 8 oz Grated mozzarella
Cooking Spinach Lasagna
1. Cook noodles till al dente.
2. Drain & set aside.
3. Preheat oven to 350F.
4. Heat oil in a large skillet & saute onion, garlic, tomatoes & mushrooms.
5. When onion is translucent, add herbs.
6. Chopi the spinach & add to the skillet & stir till it is wilted.
7. Simmeri.
8. Reserving 1/2 c mozzarella, in a large bowl combine the cheeses.
9. Pour vegetables into the cheese mixture & mix thoroughly.
10. Layer noodles alternately with the vegetable-cheese in an 8x13-inch baking pan. Top with reserved mozzarella & bake for 30 minutes.
11. Let sit for 5 to 10 minutes before serving.
