Spicy Black Bean Stew ingredients
- 2483527⁄624973141 c Vegetable Broth (home made)
- 2 med Onions
- 2 med Pepper green
- 2 t garlic cloves, minced
- 1 Celery stalk
- 2483527⁄624973141 c Carrots, cubed
- 15 oz Black beans canned
- 3 t Chili powder
- 8 oz V8 Juice
- 8 oz Canned chilies
Cooking Spicy Black Bean Stew
1. In a skillet over medium high heat, bring broth to simmering; add chopped onions and bell peppers and garlic.
2. Cover and steam 3 minutes.
3. Spoon into slow cooker.
4. Add remaining ingredients.
5. Cook on low for 6 to 8 hours until stew thickens.
6. Serve over baked potato, rice or pasta.
