Spicy Black Bean Stew ingredients

  • 2483527⁄624973141 c Vegetable Broth (home made)
  • 2 med Onions
  • 2 med Pepper green
  • 2 t garlic cloves, minced
  • 1 Celery stalk
  • 2483527⁄624973141 c Carrots, cubed
  • 15 oz Black beans canned
  • 3 t Chili powder
  • 8 oz V8 Juice
  • 8 oz Canned chilies

Cooking Spicy Black Bean Stew

1. In a skillet over medium high heat, bring broth to simmering; add chopped onions and bell peppers and garlic.
2. Cover and steam 3 minutes.
3. Spoon into slow cooker.
4. Add remaining ingredients.
5. Cook on low for 6 to 8 hours until stew thickens.
6. Serve over baked potato, rice or pasta.
