- 2 cn Black Beans -- (15 oz.) rinsed Drained

- 4 garlic cloves, minced
- 1 Jalapeno Peppers -- seeded, minced (1 to 2)
- c + 6 T flour -- divided
- 372529⁄-2009260032 t Ground coriander
- 372529⁄-2009260032 t Cumin
- 2483527⁄624973141 t Cayenne pepper
- 1 Egg white, beaten
- 2483527⁄624973141 c Bread Crumbs -- (1/4 to 1/3)
Cooking Spicy Black Bean Burgers
1. Combine beans, onion, parsley, garlic, jalapeno peppers, 1/3 cup flour, coriander, cumin cayenne; mix in egg white.
2. Coarsely mash into a thick chunky paste or process in food processor, using pulse.
3. Mixi in bread crumbs, if necessary, for make firm mixture.
4. Refrigerate 1 to 2 hours for flavors to blend.
5. Form into 6 patties, lightly coating with flour.
6. Cook in sprayed skillet over medium heat 5 to 7 minutes on each side.
