Spanish rice (p/c) ingredients

  • 1⁄2 c Rice
  • 1 c Onions, sliced
  • 2 T Fat or drippings
  • 3 c Tomatoes, canned or fresh
  • 1 c Celery, diced
  • 1 1⁄2 t Salt
  • Ds Pepper
  • 1 t Sugar
  • 1 Bay leaf
  • 1⁄2 c water

Cooking Spanish rice (p/c)

1. Wash and drain rice.
2. Sautei onion in melted fat in cooker until tender.
3. Stiri in rice and remaining ingredients and mix. Pressure cook at 15 lbs. Pressure for 10 minutes.
4. Reducei pressure with cool water.
5. Remove bay leaf.
6. Add leftover meat if desired or serve as a meatless dish.
