Southwest Spaghetti Pie ingredients
- 8 oz spaghetti
- 1⁄2 c 2% lowfat milk
- 1 Eggs
- 1 lb Lean ground pork
- 1 c Onions
- 1 Green bell pepper
- 1 Large garlic clove
- 1 T Chili powder
- 1⁄2 t Ground cumin
- 1⁄2 t Oregano
- 1⁄2 t Salt
- 1⁄4 t Black pepper
- 16 oz Canned tomato sauce
- 4 oz jalepeno pepper Monterey Jac
- 4 oz Cheddar cheese
Cooking Southwest Spaghetti Pie
1. Preheat oven to 425 °F. Cook pasta according to package directions.
2. Whiski together the milk and egg and mix in the hot pasta.
3. Spread the mixture in a buttered 9 by 13-inch baking dish.
4. Cook the pork, onion, green pepper, and garlic together in a large skillet for about 6 minutes over medium heat until the pork is cooked through.
5. Drain or spoon off excess fat. Stiri the chili powder, cumin, oregano, salt and black pepper into the pork and cook for about 2 minutes.
6. Stir in the tomato sauce and cook for 2 minutes more.
7. Spread the meat over the pasta in the baking dish.
8. Sprinkle both cheeses evenly over the top. Bakei in the lower third of the oven for about 10 minutes until cheese is melted and the casserole begins to bubble.
9. Let stand for 5 minutes then cut into squares and serve.
10. Note: The casserole can be assembled several hours ahead and refrigerated.
11. To bake the cold casserole, remove it from the refrigerator about 15 minutes before baking.
12. Bake at 350 °F. For about 25 minutes, until heated through and the cheese is melted and bubbly.
