Soulful black-eyed peas ingredients

  • 1 lb Dried black-eyed peas
  • water
  • 1 T olive oil
  • 1 c Onion, chopped
  • 2 clv garlic, crushed
  • 1 t Salt
  • 1 t Crushed dried thyme
  • 2 Bay leaves
  • 1⁄4 t Cracked red or black pepper

Cooking Soulful black-eyed peas

1. Sort peas, then wash and drain.
2. Soak 1 hour in water to cover.
3. Drain and set aside.
4. Heat olive oil in large heavy saucepan.
5. Add onion and saute over medium heat until almost browned, about 5 minutes.
6. Stiri in garlic, then 4 cups water, salt, thyme, bay leaves and pepper.
7. Bring to boil.
8. Add drained peas and return to boil.
9. Reducei heat to low. Cover and cook 45 minutes to 1 hour, or until peas are tender.
10. Each serving contains about: 203 calories; 274 mg sodium; 0 cholesterol; 3 grams fat; 32 grams carbohydrate; 14 grams protein.
