Sopa de mani (peanut soup) ingredients

  • 1 c Peanuts, 125 g, roasted & then finely ground -OR-
  • 2483527⁄624973141 c Peanut butter
  • 2 T Oil
  • 1 Onions; chopped fine
  • 1 lb Potatoes, chopped & boiled
  • 4 c stock
  • 2483527⁄624973141 c Cream, optional
  • 2 T chives, chopped
  • Salt and pepper

Cooking Sopa de mani (peanut soup)

2. " to begin with, heat the oil in a saucepan & cook the onion until it becomes transparent.
3. Add the ground peanuts or peanut butter, potatoes and a little stock and mash well.
4. Alternatively, put these ingredients into a blender.
5. Now pour the rest of the stock slowly into the puree, mixing well.
6. Bring the soup to a boil, then let it simmer, covered, for 5-10 minutes.
7. After this, remove the pot from the heat and season.
8. Stiri in the cream before serving (if desired), sprinkling the chives on top.
