Snow muffins

- Yield:
Snow muffins ingredients
- 2 c Sifted cake and pastry flour
- 3 t baking powder
- 3 t butter
- 1⁄2 t Grated lemon or orange rind
- 1⁄2 c White or brown sugar
- 3⁄4 t Salt
- 3⁄4 c Milk
- 1⁄2 c Clean white snow *
- 1⁄2 c Raisins
Cooking Snow muffins
1. Mixi dry ingredients in a bowl.
2. Make a depression in the centre and pour in the milk, butter and grated rind.
3. Stiri slightly.
4. Add snow and raisins.
5. Stir only until dry ingredients disappear.
6. Spoon into 12 buttered muffin cups filling 2/3 full.
7. Bakei at 400°F for 15 to 18 minutes.
8. Serve hot with butter or preserves.
9. *clean frost scraped from a freezer may be used instead of snow.
