SINIGANG NA BABOY (Pork in Sour Broth) ingredients

  • 1 1⁄2 lb Pork riblets or pork ribs,country style,cut to pieces
  • 5 c water
  • 4 med Tomatoes, sliced
  • 1 med Onions, sliced
  • 1 1⁄2 t Salt
  • 1 med Icicle radish, cut into 1'' pieces OR
  • 10 red radishes, pared
  • 1⁄4 lb Green beans
  • 1⁄2 lb Spinach (or cabbage,mustard greens orwatercress)
  • 5 med Sampaloc (tamarind) available as powdered pkg]

Cooking SINIGANG NA BABOY (Pork in Sour Broth)

1. In a large pot, bring water and pork to a boil.
2. Add tomatoes, onion, salt and tamarind.
3. Simmeri 1 hour or until pork is tender.
4. Optional: Remove tamarind and mash with some broth.
5. Straini juice back into pot. Taste for seasoning.
6. Bring to a boil.
7. Add green beans and radish.
8. for 10 minutes.
9. Add spinach, cover and remove from heat.
10. Let stand 5 minute to finish cooking spinach.
11. Variations: Beefi (stewing, brisket, shank or plate) may be used in place of pork.
12. Adjust cooking time for each.
