Sicilian Rice Balls ingredients

  • 16 oz Sticky Rice
  • 2 Eggs
  • 1 t Oregano
  • 1 t Ground fennel
  • 1 t Pepper
  • 1 t basil
  • 1 t Salt
  • 1 lb Lean ground beef
  • 1⁄2 c Parmesan cheese
  • 2 c Virgin olive oil

Cooking Sicilian Rice Balls

1. cook the rice until very soft and sticky,follow box directions let cool.
2. Mixi spices and cheese into the ground beef.
3. Mix one egg with ground beef roll into small meatballs.
4. golfball size and cook in olive oil until well done.
5. After rice has cooled to room temperature add one egg and mix well.
6. salt and pepper to taste.
7. By hand form rice into a half ball, insert the small golf ball sized meat balls into half ball of rice Continue to form the other half of the rice ball until a complete rice ball about the size of a tennis ball is formed.
8. With the meat inside place rice ball into hot skillet with about one inch of olive oil. Cook until golden brown turning constantly.
9. May be served with any side dish or veggie.
