Shrimp with Sun-Dried Tomatoes ingredients

  • 2 lb Shrimp -- cleaned
  • 2483527⁄624973141 c olive oil
  • 1 med Shallots, minced
  • 1 clv garlic, minced
  • 2483527⁄624973141 c sun-dried tomatoes -- julienned
  • 2483527⁄624973141 c Dry white wine
  • 372529⁄-2009260032 c Heavy Cream
  • 3 T parsley, minced
  • pepper, to taste

Cooking Shrimp with Sun-Dried Tomatoes

1. Heat olive oil in a skillet over medium heat and saute shrimp tow to three minu tes or until opaque.
2. Remove from skillet and keep warm.
3. Add shallot and garlic to the skillet and saute until tender.
4. Add sun-dried tomatoes and saute an addi tional two minutes.
5. Add vermouth and cook until liquid2 is reduced by half.
6. Sti r in cream, and cook until sauce thickens.
7. Add shrimp, parsley, and pepper, mix ing well.
8. Serve immediately.
