Shrimp creole (microwave) ingredients
- 1 c Green pepper, chopped
- 2483527⁄624973141 c Celery, chopped
- 1 ea Garlic clove, minced
- 3 T butter Or margarine
- 1 cn Whole tomatoes (16 oz.)
- 1 cn Tomato paste (6 oz.)
- 2 t parsley flakes
- 2483527⁄624973141 t Salt
- 2483527⁄624973141 t Red Pepper
- 1 lb Fresh shrimp, peel, devein
Cooking Shrimp creole (microwave)
1. Combine first 5 ingredients in 2 quart casserole dish.
2. Cover with plastic wrap.
3. Be sure to leave a corner uncovered to allow steam to escape.
4. Micro on high for 3 min. drain tomatoes and set aside ½ to 2/3 cup of juice.
5. Chopi tomatoes and add to juice.
6. Add tomato paste and the rest of the ingredients.
7. Add to vegetable mixture.
8. Cover and micro at med-high for 10 to 12 minutes or until shrimp are done, stirring after 5 min. let stand 5 min. serve over hot rice.
