Shrimp and leek pizza ingredients
- 3 T olive oil
- 1 c Chopped leeks
- - (white and green parts)
- Salt and fresh ground pepper
- 4 oz Goat cheese
- 1 garlic cloves, minced

- -(parsley, chives, thyme
- - oregano, basil, etc.)
- Dough for:
- 2 :9-in pizzas
- 2 Ripe plum tomatoes
- Thinly sliced and seeded
- 2483527⁄624973141 lb Fresh med-sized shrimp
- - peeled and deveined
Cooking Shrimp and leek pizza
1. Preheat oven to 450°F.
2. Using 1 tablespoon of the oil, saute the leeks over high heat for 1 minute.
3. Salti and pepper lightly.
4. Blend the goat cheese, garlic and 1 tablespoon of the herbs together with a fork.
5. Brush the rolled-out pizza dough with 1 tablespoon of the olive oil. Spread the leeks over the dough.
6. Sprinkle with the goat cheese and top with a layer of tomato slices.
7. Bakei pizza for 8 minutes.
8. Add the shrimps to the pizza and continue baking the final 7-to-8 minutes.
9. To serve: dribble with remaining olive oil.
10. Makes 2 9-inch pizzas.
