Shellfish Okra Gumbo

Shellfish Okra Gumbo ingredients
- 2⁄3 c Peanut oil
- 3 lb Fresh okra
- 1⁄3 c flour
- 4 c Onions
- 1 t Tomato paste
- 2 lb tiger prawn
- 1 pt oyster
- 1 lb crab meat
- 1 c Smoked ham
- 1⁄2 c parsley
- 2 T garlic
- 3 Bay leaf
- 1 c Celery
- 1 t Salt
- 1⁄2 t white pepper
Cooking Shellfish Okra Gumbo
1. Heat half of oil in a skillet, over a medium flame.
2. Add okra, heat and stir for 6-8 minutes.
3. Remove from heat and set aside.
4. Heat remaining oil in a heavy saucepot, over a medium flame add flour, heat and stir to a rich medium brown color.
5. Add onions, tomato paste, and water-mix well.
6. Add remaining ingredients-mix well.
7. Bring to a boil, reduce heat, and simmer, uncovered, for 60 minutes.
8. Serve hot, with hot-cooked rice, and tabasco sauce to the side.
