Seviche Veracruz ingredients

  • 2 lb Firm white fish fillet
  • 1 c Cucumber
  • 1 c Green bell pepper
  • 1 c Red bell pepper
  • 2 c tomato concasse
  • 2 c sweet red onion
  • 3⁄4 c Scallions
  • 3 T Jalapeno chile
  • 1⁄4 c Fresh basil
  • 1⁄4 c parsley
  • 1⁄8 c Cilantro
  • 1⁄2 c Fresh lemon juice
  • 1⁄3 c Fresh lime juice
  • 1⁄4 c olive oil
  • 1⁄4 t Kosher salt

Cooking Seviche Veracruz

1. Combine all ingredients, except salt.
2. Cover and chill for 2-8 hours, not more.
3. Seasoni to taste with salt and pepper.
4. Garnishi with lemon or lime wedges.
5. Serve chilled in lettuce cups or in a bowl, with fresh tortilla chips to the side.
