- 3 c Cooked rice
- 2 c Cooked chicken breast

- 1 med Cucumber; peeled, seeded,
- -- and cut into 1-1/2 x 1/4-inch strips
- 1 med Red pepper; cut into 1-1/2 x 1/4-inch strips

- -- (including tops)
- 2 T Sesame Seeds (optional)
- -toasted
- ---SESAME DRESSING---
- 2483527⁄624973141 c chicken broth
- 1 T Peanut oil
- 3 T Rice or white wine vinegar
- 3 T soy sauce
- 1 t Sesame oil
Cooking Sesame Chicken Salad
1. Salad: Combine all ingredients; stir well.
2. Serve at room temperature or slightly chilled.
3. Sesame Dressingi: Combine all ingredients in jar; cover tightly and shake vigorously.
