Seafood Jambalaya ingredients
- 1 T Vegatable oil
- 1 c Green bell pepper
- 1 c Onions
- 1⁄2 c Celery
- 1 garlic cloves
- 1 1⁄4 c Long grain rice
- 14 1⁄2 oz canned stewed tomatoes, low
- 10 1⁄2 oz canned low sodium chicken br
- 1 c water
- 3⁄4 t Oregano
- 3⁄4 t thyme
- 1⁄4 t Cayenne pepper
- 1⁄8 t Allspice
- 1 lb Surimi seafood
- 2 T Lemon juice
Cooking Seafood Jambalaya
1. Heat oil in 3-quart saucepan over medium heat.
2. Add green pepper, onion, celery and garlic.
3. Cook, stirring frequently, about 5 minutes or until onion is soft.
4. Add rice; cook and stir 2 minutes.
5. Add tomatoes, chicken broth, water, oregano, thyme, cayenne and allspice.
6. Bring to a boil, reduce heat, and simmer, covered for 20 minutes.
7. Add the surimi seafood and lemon juice; cook 5 to 7 minutes longer or until rice is tender.
