Sauteed Shrimp with Tomato-Herb Sauce

Sauteed Shrimp with Tomato-Herb Sauce ingredients
- 1 1⁄4 lb shrimp
- flour
- 1⁄4 t Salt and pepper
- 4 Shallot
- 1⁄3 c white wine
- 1⁄3 c chicken stock
- 1 t Orange rind
- 1 Tomato
- 2 garlic
- 1⁄4 t Dried thyme
- 1⁄4 t Marjoram
- 3 T Fresh basil
Cooking Sauteed Shrimp with Tomato-Herb Sauce
1. Dredgei the shrimp in the flour, shaking off any excess.
2. In a 10 inch non stick skillet, heat 2 teaspoons of the oil over moderate heat.
3. Add the shrimp and 1/8 teaspoon each of the salt and pepper.
4. Sautei for 30 seconds on each side until golden.
5. Transfer the shrimp to a plate.
6. Heat the remaining oil in the skillet over moderate heat, then add the shallots and cook, stirring, for 1 minute.
7. Add the wine, stock, and orange rind and cook for 2 minutes or until the liquid is reduced to
