- 6 g garlic
- 2 g Peppercorns, white
- 6 dl Wine, white "Riesling"
- 2 dl noilly prat
- Fish stock
- 2 seasoning (salt+pepper)
- 1 g Carroway seed
- 6 dl Cream 35% (whipping, etc.)
- 200 g Butter, cooking
- dl Lemon juice, fresh pressed
- g Cayenne pepper, ground
Cooking Sauce of cumin
1. BRING SHALLOTS, GARLIC, PEPPER CORN AND WINE TO BOIL REDUCE TO HALF ADD NOILLY PRAT AND FISH STOCK AND REDUCE TO 2dl ADD CARAWAY SEEDS,SEASONING AND CREAM REDUCE TO DESIRED CONSISTANCY BLEND SAUCE ADDING GRADUALLY THE COLD BUTTER ADJUST SEASONING WITH LEMON JUICE AND CAYENNE.
