Samsa ingredients

  • FILLING
  • 6 oz Walnuts, shelled, crushed
  • 1 1⁄2 T Sugar
  • 1 1⁄2 T butter, unsalted, softened
  • -dough
  • 1 1⁄2 c All-purpose flour
  • 1⁄2 t Salt
  • 2⁄3 c Lukewarm water (110
  • -degree F)
  • 4 T butter, unsalted, softened
  • 4 T Confectioners' sugar
  • 2 c Vegatable oil

Cooking Samsa

1. Filling: toss walnuts, butter, & sugar.
2. Setaside at room temperature.
3. Doughi: put flour in a large mixing bowl.
4. Make a well in the middle pour the water into the well, add salt, & ½ of the butter.
5. Stiri the flour into the flour mix slowly until absorbed.
6. At this point, beat the mixture firmly until a good firm dough is made.
7. Make the dough a ball.
8. On floured surface, rool the ball out into a retangle approx.
9. 18" x 16". Brush the dough with the remaining butter and fold into quarters.
10. Roll it out again as thinnly as you can. Cut dough into a rectangle 18" x 16" then cut the dough into 2" squares.
11. Place a teaspoon of walnut filling into the center of each square then draw up the 4 corners to the middle.
12. Pinchi the corners together to seal.
13. Heat oil in a deep pot or a fry-well to 375 °F. Drop in 8-10 fritters at a time and fry them for 3 mins.
14. Then remove to draining rack.
15. Sprinkle with the confectioner"s sugar and serve.
