Salsa fresca con chipotle ingredients

  • 1⁄2 Red onion, diced
  • 3 c Fresh Tomatoes, Diced
  • 2 T Chopped cilantro
  • 4 chipotle peppers
  • Hydrated & minced
  • 1 t Salt
  • 1 t Sugar
  • Juice of one lime

Cooking Salsa fresca con chipotle

1. Remove seeds & stems from chipotles.
2. Hydrate the dried chipotles by placing them in enough water to cover.
3. Bring them to a boil, turn off the heat and let them sit until they cool.
4. After mincing them finely, add all the ingredients together.
5. Let the salsa sit for at least a half-hour before serving.
