Salmon In Cabbage Leaves ingredients

  • 12 oz Salmon fillet
  • 2 T Light soy sauce
  • 2 T Dry sherry
  • 1 T Ginger -- peeled and minced
  • 2 Cloves garlic, minced
  • 4 large Chinese cabbage leaves
  • 1⁄4 c Green onions -- sliced
  • -diagonally
  • 1 T fresh cilantro -- minced
  • 1⁄4 t Salt
  • 1⁄8 t Ground White Pepper
  • 2 T Lemon juice

Cooking Salmon In Cabbage Leaves

1. Cut fillet into 4 equal portions, and place in a shallow baking dish.
2. Combine next 4 ingredients, stirring well; pour over salmon.
3. Cover and marinate in refrigerator for 30 minutes.
4. blanch cabbage leaves in boiling water 30 seconds.
5. Drain and rinse under cold water until cool; drain again.
6. Combine green onions, cilantro, salt and pepper in a small bowl; set aside.
7. Remove salmon from marinade; discard marinade.
8. Place one salmon piece at base of each cabbage leaf.
9. Sprinkle each with 1/4 of green onion mixture.
10. Foldi sides of cabbage over salmon, wrapping salmon like a package.
11. Arrange salmon on a steaming rack.
12. Place over boiling water; cover and steam 10-12 minutes or until fish flakes easily when tested with a fork.
13. Transfer to a serving platter, and brush with lemon juice.
