1. SEASON DUCKS ADD OIL TO ROASTING PAN ROAST IN OVEN FOR 20-30 MINUTES AT 220°C ADD MIREPOIX AND ROAST FOR ANOTHER 10 MINUTES REMOVE FAT FROM PAN ADD WINE AND STOCK, BRING TO A BOIL REDUCE FOR 2-3 MINUTES STRAIN THROUGH A FINE CHINOIS, ADD TO READY MADE SAUCE BRIGARDE CUT DUCKS INTO PIECES ARRANGE IN A GRATIN DISH,COAT WITH SAUCE BIGARADE GARNISH WITH ORANGE SEGMENTS.
