  • 1⁄2 dl Wine, white
  • 1⁄3 Brown stock
  • 15 g Tomatoes, cherry
  • 5 g parsley, fresh

DEBONE PORK LOIN AND MAKE AN INCISSION LENGTH WISE WITH KNIFE SHARPENER STUFF WITH 100gr SOAKED PRUNES AND TIE WITH STRING SEASON WITH SALT, PEPPER AND CHOPPED ROSEMARY ROAST IN OVEN FOR 45 MINUTES ADD MIREPOIX AND ROAST FOR ANOTHER 15 MINUTES REMOVE MEAT AND KEEP HOT DRAIN FAT, AND DEGLAZE PAN WITH WINE ADD STOCK, SIMMER FOR 10 MINUTES ADD REMAINING PRUNES AND BLEND IN BLITZ BLENDING MACHINE STRAIN THROUGH A FINE CHINOIS, CARVE ROAST AND ARRANGE IN GRATIN DISH GARNISH WITH CHERRY TOMATO SERVE SAUCE SEPARATELY.
