- 1⁄10 Mirepoix (cut vegetables for flavoring)
- 1⁄2 dl Wine, white
- 1⁄5 Brown stock
- 10 g parsley, fresh
- 15 g Tomatoes, cherry
- 1⁄3 Apple sauce

1. DEBONE PORK LOIN AND SEASON WITH SALT, PEPPER AND CHOPPED ROSEMARY SHAPE AND TIE WITH STRING ROAST IN OVEN FOR 45 MINUTES ADD MIREPOIX AND ROAST FOR ANOTHER 15 MINUTES REMOVE MEAT AND KEEP HOT DRAIN FAT FROM PAN, DEGLAZE WITH WINE ADD STOCK AND SIMMER FOR 10 MINUTES STRAIN THROUGH A FINE CHINOIS POUR SAUCE IN GRATIN DISH AND ARRANGE PORK SLICES ON TOP SERVE APPLE SAUCE SEPARATELY.
