Roast Duck a l'Orange ingredients

  • 2 Duck
  • Kosher salt
  • Pepper
  • 6 c Brown sugar
  • 3 Orange
  • 3 T Fresh lemon juice
  • 1⁄3 c Sugar
  • 1⁄4 c Cider vinegar
  • 1⁄4 c Orange liqueur
  • 1⁄2 c chicken stock

Cooking Roast Duck a l'Orange

1. Remove giblets.
2. When the sugar begins to take on a slight golden color, stir in the vinegar and citrus juice mixture Simmeri until the caramel is dissolved and reduced by about half Stiri in the brown sauce and bring to a simmer.
