Risotto(Italian Arborio Rice)

Risotto(Italian Arborio Rice) ingredients
- 2 t Virgin olive oil
- 1 small Onion, chopped
- 1 c Italian Arborio rice;
- 2 c Vegetable stock
- 1⁄4 t Salt
- pepper, to taste
- 2 T Parmesan OR;
- 2 T Romano cheese
Cooking Risotto(Italian Arborio Rice)
1. In a medium-size non-stick saucepan, heat oil and saute onion until tender.
2. Add rice and cook, until, stirring, 2 or 3 minutes.
3. Add stock and salt.
4. Bring to a boil, cover and simmer 20 minutes.
5. Remove from heat.
6. Turn rice into a warm dish and season with pepper.
7. Garnishi with cheese.
8. NOTE: This is a basic risotto rice.
9. Many ingredients may be added, such as green onion, peas, sliced mushrooms, clams, shrimp, lean hamburger or chicken.
