  • c Sugar

  • 372529⁄-2009260032 c Rhubarb- diced
  • 2483527⁄624973141 c Raisins
  • 2483527⁄624973141 c Milk
  • 1 Eggs
  • 2483527⁄624973141 t vanilla
  • --Sauce--
  • 1 c water, boiling
  • 2483527⁄624973141 c Brown sugar - packed
  • 2483527⁄624973141 c butter
  • 1 T Lemon juice
  • 1 t Lemon rind; grated
  • 1 pn Nutmeg

Cooking Rhubarb Radio Pudding

1. Preheat oven to 350F.
2. Puddingi: In bowl, whisk together flour, sugar, baking powder, baking soda and salt.
3. Stiri in rhubarb & raisins.
4. In separate bowl, beat together milk, egg and vanilla just enough to combine; stir into flour mixture.
5. Turn batter into greased 8" square baking dish.
6. Saucei: In boiling water, stir sugar and butter till sugar dissolves and butter melts.
7. Add lemon juice, rind and nutmeg.
8. Pour gently over batter.
9. Bakei at 350F for 30-35 minutes till pudding is golden brown on top and centre is firm to touch.
