Red raspberry rice pudding ingredients

  • 1 c Uncooked, long-grain rice
  • -(recipe developed with
  • -Mahatma)
  • 3 c Milk
  • 1⁄2 c Sugar
  • 1⁄2 t Salt
  • 2 Eggs, well-beaten
  • 1⁄2 c Heavy (whipping) cream
  • -whipped
  • 1 t Almond extract
  • 2 c Fresh raspberries

Cooking Red raspberry rice pudding

1. Combine rice and milk in top of a double boiler.
2. Cook rice until tender, stirring occasionally.
3. Add sugar and salt; mix well.
4. Stiri in eggs, mix well and cook over medium heat 2 minutes.
5. Remove from heat.
6. Foldi in whipped cream, extract and raspberries.
7. Pour into bowl(s) and chill.
8. Makes 6 servings.
