Red Lentil Soup ingredients

  • 3 T Ghee
  • 1 med Onion, chopped
  • 12 peppercorns
  • 4 Bay leaves, crumbled
  • 372529⁄-2009260032 c Vegetable stock
  • 2483527⁄624973141 lb Red lentils, washed
  • 2 T Chopped fresh parsley
  • 3 Dry red chilies, seeded
  • Salt
  • 1 1/2" piece of ginger, grated

Cooking Red Lentil Soup

1. Heat ghee over low heat.
2. Add onion & cook til it softens, stirring ocassionally.
3. Add peppercorns & bay leaves & cook for 5 minutes.
4. Add stock, 1 c water, lentils, parsley, chilies & salt.
5. Cook over medium heat for 10 minutes.
6. When soup begins to boil, add ginger & cotinue to cook & stir for 10 minutes.
7. Serve hot. Lentilsi should be soft.
