Red Lentil Soup

Red Lentil Soup ingredients
- 3 T Ghee
- 1 med Onion, chopped
- 12 peppercorns
- 4 Bay leaves, crumbled
- 372529⁄-2009260032 c Vegetable stock
- 2483527⁄624973141 lb Red lentils, washed
- 2 T Chopped fresh parsley
- 3 Dry red chilies, seeded
- Salt
- 1 1/2" piece of ginger, grated
Cooking Red Lentil Soup
1. Heat ghee over low heat.
2. Add onion & cook til it softens, stirring ocassionally.
3. Add peppercorns & bay leaves & cook for 5 minutes.
4. Add stock, 1 c water, lentils, parsley, chilies & salt.
5. Cook over medium heat for 10 minutes.
6. When soup begins to boil, add ginger & cotinue to cook & stir for 10 minutes.
7. Serve hot. Lentilsi should be soft.
