Red Beans and Rice with Smoked Sausage

Red Beans and Rice with Smoked Sausage ingredients
- 1 lb Dried red beans
- 1 garlic cloves, chopped
- 1 1⁄2 lb Smoked sausage cut
- 1 t Dried thyme
- Into chunks
- 1 t Ground pepper
- 8 oz Smoked ham shanks
- 1⁄2 t sage
- 1 Large onions, chopped
- 1 pn Cayenne pepper
- Salt
- Freshly cooked rice
Cooking Red Beans and Rice with Smoked Sausage
1. Place beans in Dutch oveni and cover generously with water.
2. Let soak 30 minutes.
3. Add remaining ingredients to beans except salt and rice.
4. Bring to boil over medium high heat.
5. Reducei heat to medium low, cover and simmer until beans are tender, adding more water if necessary (about 2 1/2 hours).
6. Add salt to taste.
7. Discard ham bones.
8. Remove about 3 tablespoons of beans from mixture and mash to paste; return to Dutch oven and stir.
9. Simmeri 15 more minutes.
10. Serve over hot rice.
