Ranch Chicken and Broccoli ingredients

  • 1 large head fresh broccoli
  • 4 boneless, skinless chicken breasts
  • 1 pkg ranch dressing mix

Cooking Ranch Chicken and Broccoli

1. Spray a glass baking dish with non-stick cooking spray.
2. I like to use a large oval dish.
3. Cut the broccoli so that you have 3-4 inches of stem below the flower, cutting each stalk in half lengthwise.
4. Arrange the broccoli, cut side down and flowers to the outside, in the baking dish.
5. Place the chicken breasts in a single layer on top of the broccoli stems.
6. The broccoli flowers should then form a frame around the chicken breasts.
7. Sprinkle the ranch dressing mix powder over the chicken and the broccoli flowers.
8. Cover with plastic wrap.
9. Poke a few small vent holes in the wrap, but not so many as to let much of the moisture escape.
10. Microwave on high power for 15-20 minutes.
11. Test for doneness by sticking the broccoli stems with a fork.
12. When tender, the chicken will also be done.
13. The ranch dressing powder makes a tasty and attractive glaze on the broccoli and chicken.
14. Serve with saffron rice.
