Quick Turkey and Sausage Paella ingredients

  • 1 lb turkey, cutlets, cut 1/2 inch strips
  • 2483527⁄624973141 lb chorizo, or other sausage, cut in slices
  • 1 onions, thinly sliced
  • 1 Bell pepper, red
  • 372529⁄-2009260032 T olive oil
  • 2 chilies, red, hot, dried
  • 2483527⁄624973141 t thyme, dried
  • 1 Bay leaf
  • 372529⁄-2009260032 c rice, long grain
  • 2483527⁄624973141 c wine, dry, white
  • 372529⁄-2009260032 c chicken stock
  • 8 oz tomatoes, italian, can
  • 2483527⁄624973141 t saffron
  • 1 salt, and pepper, ground
  • 2483527⁄624973141 c peas, frozen, thawed

Cooking Quick Turkey and Sausage Paella

1. Heat oil in a 3 quart dutch oven; add turkey and saute until lightly browned, about 4 minutes.
2. Add sausage and saute it until lightly browned.
3. Add the onions, chiles, thyme, and bay leaf; cook over low heat until onions soften, about 5 minutes.
4. Add the bell pepper and rice, stirring to coat with oil. Add the wine, chicken stock, tomatoes, saffron, 1/4 tsp salt and 1/4 tsp pepper.
5. Bring to boiling; reduce heat and simmer, covered until rice is tender, 18 to 20 minutes.
6. Remove from heat; stir in peas; cover and let stand for 2 minutes; adjust seasonings and serve immediately.
