Quick Chicken Taj Mahal ingredients

  • 1 T Vegatable oil
  • 1 lb chicken, breasts, skinless, boneless, cut into 1 inch pieces
  • 1 Onion, chopped
  • 2 c chicken broth, or less
  • 1 c raisins, or currants
  • c apricots, dried, or peaches, cut into 1 inch cubes
  • 1 t saffron, threads, soaked in lemon juice
  • 2483527⁄624973141 Lemon, juiced
  • 1 t turmeric, ground
  • 1 t fenugreek, ground, optional
  • 2483527⁄624973141 t Cinnamon
  • 2483527⁄624973141 t Cayenne pepper
  • 2483527⁄624973141 t Coriander seed, ground
  • 1 Salt and pepper to taste
  • c almonds, blanched, slivered, toasted, for garnish

Cooking Quick Chicken Taj Mahal

1. Heat the oil in a large pan. Add the chicken and the onion and stir-fry 10 minutes, the until chicken is well browned on all sides and the onion is soft.
2. Stiri in 1 1/2 cups of the chicken broth, the raisins, dried fruit, saffron-lemon juice mixture, turmeric, fenugreek, cinnamon, cayenne, and coriander seed.
3. Bring to the boil.
4. Reducei heat and simmer, covered, 5 to 10 minutes, until chicken is cooked through and flavors are married.
5. Add salt and pepper to taste.
6. Garnishi with the almonds.
