Pumpkin preserves ingredients

  • 4 lb Pumpkin (prepared)
  • 3 Lemons
  • 4 lb Sugar
  • 1⁄2 t Salt
  • 1 T Mixed spices *

Cooking Pumpkin preserves

1. Wash pumpkin.
2. Remove peel and seed.
3. Cut pumpkin as wanted.
4. Weigh and mix with sugar.
5. Let stand 12 to 18 hours in a cool place.
6. Add thinly sliced lemons, salt and mixed spices (tied in bag).
7. Boil until pumpkin is clear and sirup thick.
8. Pour, boiling hot, into hot ball jars; seal at once.
