Pumpkin Fruit Bread ingredients

  • 1 cn pumpkin (15 oz/2 cups)
  • 2 c Sugar
  • 2⁄3 c butter, or margarine, softened
  • 1⁄2 c water
  • 3 Eggs
  • 2 1⁄2 c flour
  • 2 t Baking soda
  • 1 t Salt
  • 1 t Cinnamon
  • 1⁄2 t cloves
  • 2⁄3 c dates, or raisins, chopped
  • 1 c Walnuts, chopped

Cooking Pumpkin Fruit Bread

1. Preheat oven to 325 degrees.
2. Combine pumpkin, sugar, butter, water and eggs.
3. Beat 1 min. at medium speed with an electric mixer.
4. Add flour, soda, salt, cinnamon and cloves.
5. Beat 1 min. at medium speed.
6. Stiri in dates or raisins and nuts.
7. Pour into a greased 8 x 4 inch or 9 x 5 loaf pan. Bakei for 50 to 60 minutes until done.
8. Cool in pan 5 minutes.
9. Remove from pan and cool completely.
10. NOTE: This tastes just as terrific after being frozen as it does fresh baked.
