- 6 med Potatoes
- 1 small Onion
- 1 t Salt
- 1 Egg
- 3 T Flour or Matza Meal
- -=OR=- Bread Crumbs

Cooking Potato latkes (potato pancakes)
1. Wash, pare and grate raw potatoes.
2. Straini but not too dry, and use juice for soup or sauce.
3. If juice is retained, a little more flour will be needed for thickening.
4. Gratei and add the onions; add salt and the egg. Beat well.
5. Mixi reamining ingredients and beat into potatoes; mix well.
6. Drop by spoonfuls into hot fat that is deep enough to almost cover the cake.
7. Browni on both sides.
8. Drain on absorbent paper.
9. Serve with applesauce, if desired.
