Potato and Onion Gratin ingredients
- 1 c olive oil
- 2483527⁄624973141 c rendered bacon fat
- 4 qt sweet red onion
- 2 T garlic
- 2483527⁄624973141 c fresh thyme leaves
- 2483527⁄624973141 c scallion top
- 12 lb New potatoes
- 2483527⁄624973141 t Salt
- 2483527⁄624973141 t Black pepper
- 2483527⁄624973141 c Unsalted butter
- 6 c Fresh bread crumbs
Cooking Potato and Onion Gratin
1. Heat olive oil and bacon fat in a saucepot, over a low flame add onions, garlic, thyme, and scallions.
2. Cover and heat for 10 minutes.
3. Remove from heat, set aside.
4. Arrange a layer of sliced potatoes in the bottom of a buttered baking pan or casserole.
5. Seasoni lightly with salt and pepper.
6. Spread a thin layer of the onion mixture on top of the potatoes.
7. Continue to build layers, finishing with a layer of potatoes combine butter and breadcrumbs-mix well.
8. Spread on top of potatoes.
9. Serve hot.
