Pork with Sweet Potatoes and Pineapple ingredients

  • 4 pork chops -- 3/4 inch thick
  • 4 med sweet potatoes -- or canned
  • 4 pineapple rings in juice
  • 1 c pineapple juice -- from can
  • 1⁄4 c Brown sugar - packed
  • 1 T Cornstarch
  • 2 T pineapple juice -- from can
  • 1⁄4 t Salt
  • 1⁄4 c water
  • 2 T margarine

Cooking Pork with Sweet Potatoes and Pineapple

1. Trim excess fat from chops and brown well in a heavy skillet.
2. Lay on paper towels to drain.
3. In a shallow casserole, arrange pineapple.
4. Lay the chops on top, and the potatoes over that.
5. Heat the pineapple juice to boiling.
6. Stiri in brwon sugar, cornstarch, and salt, stirring until syrup is clar and thickened.
7. Stir the water and margarine into the hot syrup , pour over casserole.
8. Bakei at 350 covered for 1 hour.
9. During last 15 minutes, uncover and complete cooking.
